Chicory & Rose Hip Marinated Eggs
Marinated eggs have become my newest obsession. They’re an easy meal prep I’ve been loving making for the week ahead and they’ll last for most of the week.
In this recipe, I’ve included Rose Hips & Chicory for an added boost of nutrients.
🌹 Rose Hips Benefits:
(The fruit of the rose plant, especially rich in vitamin C)
1. Antioxidant powerhouse
Very high in vitamin C, polyphenols, and carotenoids
Helps reduce oxidative stress and supports collagen synthesis (anti-aging & skin health)
2. Anti-inflammatory
Flavonoids and galactolipids in rose hips reduce joint pain and systemic inflammation
Shown to help with osteoarthritis and general pain reduction
3. Immune-boosting
Vitamin C and plant compounds modulate immune response and support viral defense
Often used in herbal infusions for colds and flu
4. Skin and connective tissue support
Supports collagen production (especially combined with vitamin C-rich herbs/foods)
Used traditionally for skin healing and elasticity
5. Gentle laxative & gut-soothing
The pectins and acids in rose hips help support digestion and mild bowel regularity
Often paired with other gut-supportive herbs like chamomile or slippery elm
🌿 Chicory Root Benefits:
(Root of the chicory plant, often dried and roasted — also a source of prebiotic fiber)
1. Prebiotic gut support
High in inulin, a fermentable fiber that feeds beneficial gut bacteria (like Bifidobacteria)
Can help increase short-chain fatty acid production, supporting gut lining integrity and reducing inflammation
2. Blood sugar balance
Inulin may help regulate blood sugar and improve insulin sensitivity
Chicory is often used in metabolic-supportive formulas and coffee alternatives
3. Liver detox and bile flow
Traditionally used to support liver function and bile production
Stimulates gentle liver detox pathways, helping with fat digestion and estrogen clearance
4. Anti-parasitic and antimicrobial
Contains sesquiterpene lactones that exhibit mild anti-parasitic and antifungal effects
May support cleansing protocols and Candida management (in moderation)
5. Gentle bitter for digestion

Especially useful if you’re reducing baked fats and want to support smoother digestion of roots or proteins
Ingredients:
6-8 eggs
2-3 cups water, to boil the eggs
A couple pinches of sea salt
1/2 tbsp chicory root
1 tsp rose hips
thumb of ginger
1-2 slices orange peel (optional but adds a sweet, delicate flavor)
2 tbsp coconut aminos
2 cloves garlic, sliced
Preparations:
Add the eggs to a pot of water. Bring the eggs to a boil. Then, turn off the heat and set aside, covered for 7-8 minutes. 6 minutes for a jammy egg. Run under cool water and peel.
In a small pot, combine 2-3 cups of water, chicory root, rose hips, garlic, coconut aminos and optional orange peel. Simmer gently for 10–12 minutes.
Remove from heat and let cool slightly.
Place the peeled eggs in a clean jar or container. Pour the infused marinade over the eggs.
Cover and refrigerate at least 4 hours, ideally overnight for best flavor.
Enjoy chilled or at room temp — great over rice, noodles, porridge, or tucked into wraps.
✨ Storage & Tips:
Will keep in the fridge up to 4-5 days.
Color will deepen the longer they marinate.
For a more acidic edge, you can add 1 tsp rice vinegar or apple cider vinegar.
